Ingredients:
1 ½ pounds tender venison round steak 2 tablespoons soy sauce ½ teaspoon sugar 1 ½ cups beef broth 3 tablespoons flour 2 teaspoons curry powder ½ teaspoon salt 3 tablespoons cooking oil 1 medium onion, cut into wedges 3 cups fresh broccoli buds, cut into 1-inch pieces Chow mein noodles Slice steak into thin strips across the grain. Place in bowl and sprinkle with soy sauce and sugar. Set aside. Stir together broth, flour, curry powder and salt. Set aside. Heat wok or large skillet over high heat. Add 2 table spoons of cooking oil. Stir-fry onion wedges and broccoli for 4 minutes. Remove vegetables. Add remaining oil to wok and stir-fry half of the meat for 3 minutes and push to side of wok. Repeat with remainder of meat. Stir flour-broth mixture and add to center of wok. Cook and stir until bubbly. Return vegetables to wok, stir, cover, and cook 3 minutes more. Serve over chow mein noodles.
