The new Pepperoni Kit includes everything you need to make the perfect pepperoni time and time again: seasonings, cure, citric acid, casing and detailed, easy-to-follow instructions. Each kit will season 18 lbs. of meat. The company recommends 25 percent shrinkage in the drying process which will vary from region to region. For instance, the drying time may take one day in Wyoming and seven days in Texas.
