This fresh vegetable recipe is so good, no one will realize they are eating something that is actually good for them.

Ingredients:

  • 1 medium head of lettuce (washed, drained and cut up)
  • 1/2 cup celery (chopped)
  • 1/2 cup red onion (chopped)
  • 1/2 cup green pepper (chopped)
  • 1 small package of peas
  • 2 cups homemade mayonnaise
  • 1 TBS white sugar
  • 1 cups cheddar cheese (shredded)
  • 12 strips bacon, fried and crumbled (use a rolling pin)

Directions:

Cook the frozen peas in boiling water for 2 minutes. Do not overcook. Drain and set aside.

In a 9x13 pan you will create layers of vegetables. The first layer is lettuce. You don't want a huge amount because the salad will be dry. Next layer celery, then red onion, green pepper and finally the peas.

In a small bowl mix the mayo and Miracle Whip together and add 1/4 cup water; combine well till smooth and creamy. If it is too thick, add more milk.

Pour over the vegetables and seal the sides with the mayo mixture. Sprinkle the sugar over the mayo mixture. Next add the cheese and finally the bacon on top of that. Chill well before serving. This easy vegetable recipe is well worth making.
