Hearty Halibut Chowder

This recipe is great for cold days when you need a warm bowl of hearty halibut chowder

Ingredients:

  • 1 tablespoon olive oil
  • 1 large onion finely diced
  • 3 large potatoes, peeled and cubed
  • 2 cloves garlic
  • 6 cups chicken broth
  • 2 large carrots, shredded
  • 1 cup milk
  • 1 can creamed corn
  • Sprinkle in instant mashed potatoes to thicken
  • 2 pounds halibut, cod or other fish cubed
  • Small chunks of salmon
  • 1/2 cup shredded cheddar cheese
  • 1 pinch red pepper flakes

Directions:

Add onion to the olive oil and cook until translucent, about 5 minutes. Add the potatoes and garlic, and continue cooking until the potatoes have softened slightly about 10 minutes. Pour in chicken stock, carrots and simmer for 10 minutes. Pour in milk and season to taste with salt and pepper, then stir in fish. Simmer uncovered until fish is flaky and no longer translucent in the center about 10 minutes. Gently stir in the cheese and red pepper flakes. Serve immediately.
