- 2 cups cornmeal
- 2 TBS flour
- 1 tsp baking soda
- 1 tsp baking powder
- 1 tsp kosher salt
- 1/2 tsp garlic powder
- 1/2 cup finely chopped sweet onion
- 1/4 cup finely chopped green onion tops
- 1 egg yolk
- 1 cup buttermilk
- 8 egg whites
- oil for frying
Mix the first six ingredients together. Add the sweet and green onion. Mix the egg yolk and the buttermilk together and add to the mixture.
Heat enough oil in a pan to cover teaspoon-full sized hush puppy mixture.
Whip the egg whites until it forms stiff peaks and fold into the mixture.
Drop batter into hot oil and fry until golden brown. Drain on paper towel or a paper bag.
