Elk Bloody Mary Chili Con Carne (Recipe)

You can also make an Elk Queso Dip with this recipe. Just add a hunk of Velveeta and put everything into a Crockpot!


This recipe would work with ground venison or antelope as well.

Ingredients:

  • 1 pound ground elk burger
  • 2 tablespoons oil
  • 1 medium white onion diced
  • 1 red bell pepper diced
  • 2 cloves garlic chopped
  • 1 tablespoon chili powder
  • 1 tablespoon cumin
  • 1 teaspoon paprika
  • 1 teaspoon garlic powder
  • 1/4 teaspoon salt
  • 2 cups Blood Mary Mix
  • 1 can Kidney Beans (optional )
  • 2 cups cooked Quinoa (or use rice as an option)
  • 4-6 flour or corn tortillas

Toppings:


  • Avocado
  • Sharp Cheddar Cheese
  • Sour Cream
