Easy Butter Sauce Recipes for Fish

These butter sauces are easy to make and taste great on tilapia, grouper, ocean perch, cod, haddock, walleye, crappie and shrimp. They also perk up baked fish fillets too!
Drawn Butter Sauce Ingredients :
4 TBS butter 4 TBS flour 1/2 tsp salt 2 cups warm milk 2 TBS lemon juice chopped parsley (optional) Instructions :
In a saucepan, heat the butter until melted. Add the flour and salt. Cook for one minute and whisk in the warm milk. When thickened add the lemon juice and heat through. Sprinkle with parsley when finished topping the fish.
Lemon Paprika Butter Ingredients :
4 TBS of butter 2 tsp of paprika 2 TBS lemon juice Instructions :
Melt butter until foamy. Add paprika and lemon juice. Serve.
Browned Almond Fish Sauce Ingredients :
4 TBS blanched slivered almonds 4 TBS of butter 1 tsp of lemon juice Instructions :
Sauté almonds in butter until the almonds are brown. Add lemon juice, heat, and serve over fish.
Wine Sauce Ingredients :
2 TBS butter 1-1/2 TBS flour 1/2 cup white wine 1/2 cup cream 1/4 tsp salt 1 tsp lemon juice Instructions :
Melt butter and add flour. Gradually add liquids and salt, and cook until smooth and thick.
Cucumber Sauce Ingredients :
2 TBS butter 2 TBS flour 2 cups boiling water 1 medium cucumber, grated 1 tsp salt 1/2 tsp white pepper juice of 1 lemon or 2 TBS tarragon vinegar and 1 TBS chopped parsley Instructions :
