- 1 lb crappie fillets
- 6 strips bacon
- 1 medium onion, cut into rings
- 1 tablespoon seafood seasoning
- olive oil
- salt and pepper
- shredded cheddar cheese
- Parmesan cheese, a few tablespoons
Grease 9x13 baking pan with olive oil.
Salt and pepper fillets to taste and lay fillets in pan in a layer. Cover fillets with strips of bacon. Place onion rings on top of bacon. Sprinkle seafood seasoning on top of fillets.
Bake covered or uncovered at 400 degrees for 30 minutes, or until bacon is done.
Remover dish, top with cheddar and Parmesan cheese and bake about 4 minutes more or until cheese is melted.
Note: To speed up time, you may fry the bacon until it is almost done and bake for 20 minutes. Check fillets for doneness.
