Celeriac and Prawn Slaw

Total prep and cook time: less than 30 minutes

Ingredients:

6 raw, shelled prawns
1/2 teaspoon salt
1 celeriac, julienned
5 tablespoons mayonnaise
1 tablespoon Dijon mustard
1/4 cup chopped parsley
1 tablespoon lemon juice
zest of 1/2 lemon

Directions:

Heat 1/4 inch of water and 1/2 teaspoon salt in a small saucepan with lid until boiling
Add shelled prawns and steam for 3 to 4 minutes, until done
Remove prawns from saucepan and allow to cool on a plate
Chop prawns when cooled
Use a vegetable peeler to remove hard skin from celeriac, cut into thin slices,
then into thin strips
Mix together in a bowl the mayo, mustard, parsley and lemon juice
Add celeriac to slaw dressing and incorporate thoroughly
Stir in chopped prawns
Zest lemon over mixture and stir again
