Baked Salmon Recipe

This salmon recipe is full of flavor.
Ingredients:
2 salmon fillets 2 peeled and quartered potatoes frozen peas 4 slices bacon, cut into pieces and fried potatoes lemon zest Marinade Ingredients:
6 TBS extra virgin olive oil 2 garlic cloves, minced 1 tsp dried basil 1 tsp sea salt 1 tsp freshly ground black pepper 1 TBS fresh lemon juice 1 TBS fresh parsley, chopped Directions :
Mix the marinade ingredients together.
Place fillets in baking pan and pour the marinade over fillets. Turn to make sure both sides of the fillets are coated. Cover and place in the refrigerator for 1 hour to marinate, occasionally turning fillets.
Note: Do NOT marinate fish over 1 hour or the fillets will turn mushy.
PREHEAT oven to 375 degrees.
Place the quartered potatoes amongst the fillets and top with the peas, bacon and lemon zest.
Cover and bake for 35 to 45 minutes or until fish flakes easily with fork. You may place the fish under the broiler until golden brown on top, if you wish.
