• 1 leek, chopped
• 1 small white onion, chopped
• 2 cloves garlic, chopped
• 28 ounces white or yellow hominy
• 25 ounces green enchilada sauce
• ½ to 1 can light beer (optional, but use it if you can)
• 1 teaspoon cumin
• 1 teaspoon garlic powder
• 1 teaspoon dried oregano
• 1 teaspoon white pepper
• ½ teaspoon cayenne pepper
• ½ teaspoon kosher salt
• 3 tablespoons olive oil
