The best and simplest recipe i have for great tasting fish. First take a lemon (you may need alot depends on the amount of fish) squeze as much juice as you can into a stainless bowl. Let you fish sit in that for about 8-10 min. Then use some cornmeal and flour mixture (about 70% flour-to cornmeal ratio) in a plastic baggie. After the fish has soaked put it in the mixture making sure it gets covered. then fry or deep fry in really hot oil ( I prefer safflower but canola works as well). What the lemon does is partially cook the fish with the acids in the oil as well as infuse the a nice lemon flavour, it takes a little less time to cook and still tastes amazing
