Tapenade Crusted Trout
This next one is a lot less complicated.
We refer to it as poor mans lobster.
4 sculpin fillet's
1/2 stick of unsalted butter
2 cloves of fresh garlic, minced (adjust to taste)
Set 8in pan to medium/high heat. Add butter wait till liquified then add garlic. Lightly salt and pepper both sides of fillet and place in pan. Allow to cook for 5 minutes untouched then flip allow other side to cook for 3 minutes or until it fillet flakes apart.
You may be pleasantly surprised how rich and delicious much like lobster these ugly fish can be.
