Smoked Candied Salmon Recipe

Rydell Danzie of Field 2 Grill's smoked candied salmon recipe brings together sweet and salty flavors for a gourmet dinner.

Smoked Candied Salmon

Serves: 4-6 people
Cook time: 20-25 minutes

Ingredients:

  • 3 Salmon filets with skin on (1/2 pound per person)
  • 2 Cups black strap molasses 
  • 1 Gallon of water
  • 1 Cup of brown sugar
  • 1/2 Cup of kosher salt
  • 3 Tablespoons of black pepper
  • 1 Cup of lemon juice
  • 1 Cup of orange juice

Directions:

  1. Heat water just enough to dissolve the kosher salt, brown sugar, and black strap molasses 
  2. Once the water is heated enough pour in the kosher salt, brown sugar, and black strap molasses. Stir until dissolved
  3. Once dissolved, mix in remaining ingredients and stir. 
  4. Cool the brine down by putting it in the refrigerator or putting the pot in ice to bring the temperature down. The reason for this is because you do not want to cook any of the salmon with hot liquid.
  5. Once cooled either put the brine in a food grade bucket or other container that can hold the brine and submerge the filets (do not use aluminum).
  6. Place your salmon in the brine and let it soak submerged for 12-36 hours. 
  7. When time is up, remove the salmon from the brine and pat dry. 
  8. Start your grill and set to smoke at 180 degrees.
  9. Place your salmon skin side down and smoke for 5-6 hours.
