If you haven’t grilled up a fish immediately after you’ve caught it, you haven’t tasted fresh. That’s why whenever I go on an extended fishing trip, I consider a portable grill just as important to pack as my fishing pole. The Eureka! Gonzo Grill system is hands-down one of the most versatile outdoor cooking products on the market. It accompanies me on all of my fishing excursions, whether I am venturing out on a day trip or weekend-long adventure.

It’s inevitable that once you use the Gonzo Grill Cook System for the first time, you will be convinced that it is as functional as it is stylish. The vented steel lid contains just enough smoke to give your food that grilled flavor and the adjustable temperature knob allows you to easily cook your food accordingly. Although the exterior of the Gonzo is good looking, its interior is what makes it really unique, practical and well-designed.

Take the lid off for the first time, and you’ll see nothing other than a cast-iron griddle, perfect for an outdoor breakfast of wild boar bacon and eggs. Remove the skillet, flip it over, and you’ve got yourself a cast-iron grill! Now, set aside the dual-purpose cast-iron surface and feast your eyes on a stovetop for those times a grill or skillet won’t cut it.

But why all the fuss about cast-iron appliances? Most people I’ve asked seem to know they’re awesome, but not why they’re awesome. Cast-iron surfaces are actually safer than other modern cookware materials, such as aluminum and ceramic. Studies show that these materials can react harmfully with the food when heated. Cast-iron is also tough, durable, and like a fine wine, improves with age. This is because the repeated use seasons the cast-iron and adds flavor to future meals.

Cooking up a nice fish dinner on the Gonzo is fantastic because the surface gives your catch-of-the-day a nice blackened crust. Since it retains heat longer, your fish will get that crispy skin you’ve always wanted. I recently made this blackened catfish recipe on it, and it didn’t disappoint.

So, I’ve enlightened you on why Gonzo’s cast-iron grill and griddle surface is beneficial, but it’s important to also note why propane can be advantageous over a charcoal-powered grill in certain scenarios. Considering I live in the west, fire bans are not uncommon. During a stage one ban, you can only start a fire that can be turned off rather than put out. In these cases, a charcoal grill will not fly and the Gonzo is the perfect cooking companion.

Another benefit of a propane grill is that it offers convenience and control. As long as you have your propane canister hooked up, you can get the Gonzo started with a flick of a switch and easily regulate the heat. Since this particular cook system is circular and the heat source is located in the middle, you will notice that no matter where you put your venison patties, you will experience even cooking and each burger will be done at the same time. If you want to grill vegetables and a thin fish fillet at the same time, anticipate the veggies might take a little longer and throw them on a few minutes before your fish. Cook your food with the lid on to contain the smoke for added flavor.
