Hi all,I've been cooking for 17 years and I've had my fair share of fish recipes to offer.My favorite would have to be Nantucket cod. I will share with you a recipe for 2.Ingredients:Spinach fresh and sliced..... 8 OzGarlic chopped.... TblspOlive oil..... 2 tblsplump crab meat.... 4 OzRitz Crackers.... 1 sleeveShredded Cheddar..... 2 OzWhite Wine..... 1/4 CupCod Fish... 2 6-8 Oz eachCooking instructions:In a saute pan,  add oil and and keep on med high heat. When the oil gets hot (1-2 minutes) Add the cod and sear on both sides. (light golden brown) Place the fish in a baking pan and set aside.now in the same pan you seared the fish in, add garlic and spinach saute until spinach is cooked.( 1-2 minutes) Next add white wine and reduce for 2 minutes. Take off heat and place into a mixing bowl.Next add the crab, shredded cheddar, and Ritz crackers. Mix well. The crackers should crumble up fairly easy. after all ingredients are mixed well place them over top of the Cod and bake in the oven at 350'for 15 minutes or until done. Hope you like it like I do.
