Loaded Mashed Potatoes Recipe

These mashed potatoes are loaded with goodies like bacon, cheese and sour cream. It's heaven on a fork, trust me. Grilled steak and roasted asparagus is the perfect meal.

Ingredients:

  • 4 cups hot homemade mashed potatoes
  • 1/2 cup sour cream
  • 1-1/2 cups shredded Cheddar cheese
  • 1/3 to 1/2 cup crumbled cooked bacon
  • 1 teaspoon salt
  • 1/2 teaspoon pepper
  • 1/4 cup green onion, chopped (garnish)

Directions:

  1. Mix the ingredients together and sprinkle with the chopped green onion; serve immediately. You can also add more shredded cheddar, and bacon on top of the hot potatoes in a bowl – it's out-of-this-world good!
  2. If you like, you may also prepare this in a casserole dish. To make a casserole: Combine the potatoes, sour cream, bacon, salt, pepper and half of the cheese and spoon into a buttered 2-quart baking dish. Sprinkle with the remaining cheese and green onion. Bake, uncovered, at 350 degrees for 20-25 minutes or until cheese is melted.
  3. This recipe is so versatile. You can sauté mushrooms with the onions, or add chilies – whatever you like in your mashed potatoes!
