Fresh Cod in Tomato Sauce Recipe

- 5-6 pieces fresh cod
- Tomato sauce
- Black olives
Pan-fry lightly floured fresh cod until almost cooked.
Prepare a tomato sauce well-seasoned with oregano, salt, and pepper. Add capers and some black olives towards the end and reintroduce the cod pieces to fully cooked.
Serve over rice, polenta, couscous etc.
Good for three or four.
