Fresh Cod in Tomato Sauce Recipe

Did you know cod is rich in lean protein and vitamin B-12? Cook up this tasty cod and tomato sauce recipe for a healthy, yet delectable meal

Ingredients:


  • 5-6 pieces fresh cod
  • Flour
  • Tomato sauce
  • Oregano
  • Salt
  • Pepper
  • Capers
  • Black olives

Preparation:

Pan-fry lightly floured fresh cod until almost cooked.

Prepare a tomato sauce well-seasoned with oregano, salt, and pepper. Add capers and some black olives towards the end and reintroduce the cod pieces to fully cooked.


Serve over rice, polenta, couscous etc.

Good for three or four.
