- Fiddlehead ferns
- 3 tablespoons chopped shallots
- 4 tablespoons butter
- 3 tablespoons white wine
- 3-6 garlic cloves
- Soy sauce
- 1 tablespoon white sugar
1. Blanch fiddleheads in salted, boiling water for 1-2 minutes.
2. In a large saucepan, melt butter. Add shallots, white wine and garlic. Stir in soy sauce and white sugar.
3. Mix the ingredients well. Once the sugar is all melted, stir the fiddleheads in. It will only take a couple minutes for the fiddleheads to cook. Serve with speckled trout.
