Morel mushrooms are truly one of nature’s gifts. Oftentimes, people who despise store-bought mushrooms will have an affinity for morel mushrooms. The morel texture is meatier and less slimy than traditional mushrooms like cremini or Portobello. Not only are they tasty, but they are very nutritious as well. Morel mushrooms are high in antioxidants, protein and fiber. So start foraging, try making some of the awesome recipes below, and freeze any leftovers so you can use them year-round.

Wild Turkey and Morel Mushroom Burger Recipe

With coinciding seasons, wild turkey and morel mushrooms make a sensible pairing.

Ingredients:

  • ¾ to 1 pound ground wild turkey (breast, thigh or leg)
  • 8 ounces fresh morel mushrooms



  • 1 onion, sliced
  • 2 cloves garlic, minced
  • Splash of Worcestershire sauce
  • Recommended


  • Splash of whiskey
  • 2 tablespoons olive oil
  • 2 tablespoons butter, room temperature
  • Kosher salt and cracked pepper, to taste
  • Sliced sharp white cheddar cheese
  • 2 hamburger buns
  • 1 ripe avocado, sliced
  • Greens: baby kale or arugula

Ingredients:

  • 4 elk venison steaks
  • Coarse salt and pepper, to taste
  • 1 tablespoon of olive oil
  • 5 ounces of fresh morel mushrooms
  • 2 shallots, minced
  • 4 tablespoons of butter
  • 3 tablespoons of all-purpose flour
  • 1½ to 2 cups of unsalted beef stock, heated

  • 8 ounces of morel mushrooms
  • 1 or 2 duck eggs (or chicken)
  • 1 large shallot
  • 1 tablespoon of olive oil
  • 4 to 6 ounces of thick cut bacon, chopped
  • 3 green onions, white and light green parts chopped
  • Salt and pepper, to taste
  • 1 package of spring greens
  • French vinaigrette, homemade or store-bought
  • Walnut pieces

Morel Mushroom and Caramelized Onion Pizza Recipe

Ingredients:

  • 2 (9- to 12-inch) pizza crusts, homemade or store-bought
  • 1 cup morel mushrooms, washed and sliced lengthwise
  • 1 shallot, thinly sliced
  • 2 large onions, sliced thickly
  • 5 tablespoons olive oil, plus extra
  • ¼ teaspoon sugar
  • 2 tablespoons balsamic vinegar
  • Kosher salt, to taste
  • 4 sprigs fresh thyme, leaves chopped
  • 2 teaspoons freshly chopped chives
  • 8 ounces fresh mozzarella cheese
  • Water for thinning out onion sauce

Ingredients:

  • ½ cup of morel mushrooms, chopped finely
  • ½ cup of olive oil, separated
  • 1 large onion, finely chopped
  • 1 large lemon, juiced and zest grated
  • 1 to 2 tablespoons of chopped fresh dill
  • 2½ cups of chicken broth, separated
  • 1 cup of long-grain white rice
  • 1 jar of grape leaves, drained and rinsed
  • Salt and pepper, to taste

  • 1 cup brandy (substitute cognac)

  • 4 walleye fillets

  • 2 cups whipping cream
  • 1 shallot, diced
