Quick and Delicious Dutch Oven Campfire BBQ Nachos

Campfire food doesn’t have to be boring. These Barbecue Chicken Nachos are loaded with layers of tortilla chips, shredded chicken smothered in barbecue sauce, diced red onion, lots of melted cheese and all the toppings you want. They can be made right in your Dutch oven over the fire in only 20 minutes with minimal cleanup. These nachos are a must-try for a quick family dinner or a fun group snack while at camp.

Dutch Oven BBQ Nachos

Serves: 4 servings
Total time: 15-20 minutes

Ingredients:

  • 2 cups cooked and shredded chicken
  • 1.5 cups barbecue sauce, divided
  • 1 bag tortilla chips
  • 2 cups shredded Monterey Jack cheese
  • 2 cups shredded cheddar cheese
  • 1 Roma tomato, diced

Directions:

  • Combine shredded chicken and about 3/4 cup of barbecue sauce in a large mixing bowl. Mix well and set aside.

  • Line your Dutch oven with parchment paper. This step is optional but helps with cleanup.

  • Layer the Dutch oven with tortilla chips, barbecue chicken, cheeses, diced onion and remaining barbecue sauce in two to three layers.

  • Cover the Dutch oven with the lid and place on a metal grill over your campfire for about 10 minutes or until the cheese has melted. If you need to place your Dutch oven directly onto your fire pit, place it over a low flame or embers and keep a good eye on it so the bottom chips don’t burn. Serve warm topped with diced tomatoes, and the other optional toppings of your choosing.
