Ingredients:

• 1 cup flour
• 1 tsp kosher salt
• 1/4 tsp freshly ground black pepper
• 1/2 tsp garlic powder
• 1 tsp onion powder
• 1/4 tsp of paprika
• 1 tsp baking powder
• 1 egg, separated;
• 2/3 cup milk
• 1 TBS butter, melted
• 2 cups bluegill fillets (perch or crappie works well), flaked
• oil for deep frying
