Wild Game Recipe: Blackened Redfish

Wild Game Recipe: Blackened Redfish

Blackened Redfish

Serves: 2-4 people
Cook time: 15 minutes

Ingredients:

  • 2 1-pound filets skin on
  • 1/2 Cup of lemon olive oil
  • 2 Lemons
  • 1 Tablespoon ground black peppercorns
  • 1/2 Tablespoon ground smoked salt
  • 1 Tablespoon sweet mesquite rub
  • 1 Tablespoon lemon pepper
  • 1 Tablespoon of blackened rub (I used Bearded BBQ)
  • 3 Tablespoons of melted butter (non-salted)

Directions:

  1. Preheat your grill to 375 degrees (I used Apple Wood) 
  2. Make sure you don’t have any bones still in your filet. If so, just remove them with pliers.
  3. Pat dry your redfish from any residual water that might still be on them.
  4. Brush the redfishon both sides with the lemon oil (I used lemon olive oil. If you don’t have any, you can use any salad dressing oil that you like).
  5. Add 1 tablespoon of melted butter to the flesh side of the fish.
  6. Generously coat the flesh side with your rub and spice mixture (save one tablespoon of the mixture for the sauce later).
  7. The grill should be preheated at this point. Add your redfish skin side down and turn the grill up to 400 and close the lid.
  8. Cook for 8-10 mins. Meat should feel like a rare piece of steak and flake with the touch of a fork.
  9. While your fish is grilling now it is time to make the sauce. Melt the remainder of the butter, then juice the last of the lemons into the butter along with the rest of the spices and add ½ tablespoon of the lemon oil. 
  10. Carefully remove your fish from the grill. I like to leave the skin on since it will be crispy and act as a plate on top of your plate. 
  11. Whisk and drizzle your sauce over the top of the grilled fish just before eating.
