Master wild game chef and host of The Sporting Chef Scott Leysath will dish up some scrumptious recipes and Jill Gechter from Cinch will handout the latest 411 on the hottest new hunting apparel. Tune in to The Revolution for an informative lesson from The Sporting Chef on how to make the most of your game birds in the kitchen. Scott is an advocate of using everything you can from the game you harvest. Many hunters breast out their pheasants, ducks, geese and other game birds and simply throw away the rest. This practice means hunters are missing out on a prime opportunity to add more great natural flavor in the cooking process, rather than artificial flavorings like bullion. Tune in to find out how Scott makes a pheasant stock with braised pheasant legs and turns it into a delicious Pheasant Leg Stew. When it comes to cooking game birds, Scott cautions outdoorsmen and women against taking a whole bird, cubing it up and throwing it in a pan to cook. He says, “You don’t cook a whole cow, and you shouldn’t cook a whole pheasant. There are different parts of the bird and of the ducks that require different kinds of cooking.”
There are plenty of species out there that are less desirable when it comes to table fare, but that doesn’t deter The Sporting Chef. Scott discusses preparing one of these undesirables, Coot, and how he made a bar full of hunters and farmers believers with his Coot Cacciatore.

Waterfowl seasons are opening across the country, but how do you bag your limit in warmer temperatures? Josh Holland with Kut’em Outdoors says that hunting the early season, before the migration pushes the birds down from the north, can require some skill. Until the cool weather pushes birds down, waterfowlers will be hunting local birds. Josh says you can’t underestimate local birds because they’ve seen your spreads and your set-ups, they are smart, and that means you have to elevate your game. The secret to success is in the scouting. Josh encourages hunters to identify three key places: the roost, where they feed and where they rest mid-day. If you can identify these three places, you can effectively hunt the same birds three times a day. Josh explains how splitting into groups and sitting on different key spots can yield rewards for everyone.
