Outdoor Channel’s “Hardcore Carnivore ” is set to debut on Monday, September 23, at 9:30 ET. Hosted by live fire cook and professional carnivore Jess Pryles, the new series will be a part of the “Taste of the Wild” Monday night lineup. The show dives deep into the world of meat, from commercial to small farm meat raising. Pyles, an Australian by birth but Texan by choice, explores the best ways to hunt, butcher and cook different types of animal protein.

“One of the standout episodes features an elk hunt in the Snake River area of Eastern Idaho. Pryles teams up with great friend and mentor Shaundi Campbell for an unforgettable adventure. Hunting the rim of an extinct volcano, Pryles has opportunities to push her own limits to bag an elk. With the pressure of a film crew and cameras rolling, the moment was both nerve-wracking and exhilarating. ‘We also get into some hog hunting and dove hunting with my husband,’ shared Pryles. ‘You really get to see a glimpse into my life. We don’t have a formula for the show; it is just as real and genuine as we can possibly can be out there dishing what we are passionate about.’
“The show aims to provide a genuine glimpse into Pryles’ life, blending humor, passion for grilling, and a love for the outdoors.

"I've always been fascinated by the science behind meat and the different ways it's raised. That’s one of the reasons I completed my Meat Science certificate from University of Iowa," said Pryles. “The Outdoor Channel has given us the incredible opportunity to share our adventures and stories with broader audience. From the intense hunts to lighthearted moments, we hope to bring something unique and authentic to our viewers.”

(Photo courtesy of "Hardcore Carnivore") If the name “Hardcore Carnivore” rings a bell, its because Pryles also started a seasoning company of the same name about eight years ago. “The spices allowed us to say, ‘Here put this on your steak. This is what I think steak should taste like,” she shares. “We are in stores like Academy, Bass Pro Shops, Cabelas, Faraway Meats and all across the world. When I first put the rub out, I crossed my fingers thinking that if my core customers who buy T-shirts will buy this rub it will be a fun experiment. Here we are with nine seasonings in the line and a full line of accessories that are all created by me based off things that I use in my kitchen.”
