Sesame Seed Perch Fillets

Ingredients :
5-10 lake perch fillets 4 teaspoons sesame oil 2 tablespoons sesame seeds 1 cup onions (sliced) 2 teaspoons minced ginger 3 cloves of minced garlic 1/4 cup light soy sauce Salt and pepper as desired 8 sprigs of chives Directions :
Fish fillets are meant to be grilled to keep the juicy flavor. Oil cook surface or brush the fillet with oil, also remember to place fish on the grill near the edges or furthest from heat point.
Brush perch filets with 2 teaspoons of the sesame oil. Spread sesame seeds on a flat surface (baking pan), and press each side of the perch filets into them. Grill for approximately 3 minutes per side (furthest from heat) on hot open grill, just until flaky white. Do not overcook. Set aside.

In a saucepan on medium heat, heat the remainder of sesame oil. Place onions in oil, and cook 2 minutes. Add garlic and continue cooking for 2 minutes . Finish with soy sauce, and salt and pepper to taste.
Place perch fillets on serving plates, and pour 1/4 of the sauce over each fillet. Garnish with chives, parsley, basil or mint leaf.
Delicious when served with rice or fresh greens.
