Salmon and Portobello Recipe
Here is another recipe i came across for this falls/winter salmon. Or you could even buy the salmon from the store and make this. the mushrooms seem to accent this dish very well. and it will melt in your mouth. I also make this one with rice, im partical to wild rice but any you like will do. perhaps a nice fried rice with bean sprouts and a baked potato....... my personal fav!so... in a pan melt butter and some olive oil. then sprinkle your salmon with salt and pepper as usuall.Then start to cook your fish ( skin down first if its on still) for about three min, then turn it over and do the other side, usually takes roughly 2 min ish, untill it begins to flake. but still tender. you still want to preserve those delicious natural oils in the salmon.In another pan heat up more butter ( i like the real stuff, more taste and less hydroginized oil) and olive oil. So now add the garlic ( that was crushed first with a knife and then chopped) and sliced portobellos. now let that simmer for four or five min. untill softish. add some pepper. any will do but i like the mix ground pepper-corns the kind with the pink in it. yum....you can also add to this with other peppers, but i found simple is better. too much becomes overpowering. And dont forget to crush down the garlic before mincing it.1 salmon 2 tbsp butter1 tbsp butter 3-4 portobello's1 tbsp of olive oil 2 cloves garlicsalt & pepper 1 tbsp ground pepper.I really like this one too, so i do reccomend it for salmon. its easy and it can be made in less then ten min. I also love this dish with baked potatoes in a chacole bbq if you can manage it. with some sliced tomatos. enjoy .
