Hearts of Darkness: Steve Rinella's Stuffed Moose Heart Recipe

When the skin comes off, hunters know the drill: shoulders, loins, neck, brisket, ribs, sirloin and rump roast.
Outside of an in-the-field right of passage practiced by some, many of us wouldn't consider the heart to be table fare. But what if there was a delicious recipe that made the normally disposed of organ a delectable treat? Well, we have one.
We asked renowned hunter, chef and television host Steven Rinella from "MeatEater" to bring you a special game recipe for the hearts of hoofed beasts.
"One of my favorite episodes this season includes the consumption of five different hearts from animals I hunted over the previous year. We call this episode "Hearts of Darkness" and we think you'll find the methods pretty interesting — and tasty. Below is the recipe for one of those hearts, the voluminous glory that is a stuffed moose heart," said Rinella.
Though Rinella uses moose heart, the recipe works great with any hoofed animal, so save your deer hearts this season.
