First let me start off saying I have celiac disease which is gluten or wheat in tolerance so no wheat flour or any other wheat related things can be in my recipes.
I also posted Nanda's Beer Batter in another article as I can not eat it any more as beer has wheat and the use of flour.
Fish Fry
I am like everyone else I bought one them BPS fish fryers and it works really well for large groups
But a fry daddy works for just Nanda and I we use peanut oil for those allergic to peanuts try cotton seed oil
The coating for me has to be all corn meal but watch out lots of cornmeal adds flour be a label reader
For already prepared mix I use is Louisiana seasoned fish fry they use corn flour which is all corn so no wheat in it or you can use Masa corn flour to make your own.
I get my oil to 350 degrees then add the fish any hotter and the outside gets done before the inside as I was told you can get bad fried food but it is usually bad frying so get a good temp gauge and start small work your way up to large batches of fish
