Easy Coleslaw From Scratch

Serve with my fried paddlefish recipe.
- 2 cups shredded cabbage or (16 oz.) bag coleslaw mix
- 3 TBS onion, diced
- 2/3 cup homemade mayonnaise
- 3 TBS vegetable oil
- 1/4 to 1/2 cup white sugar (depends on how sweet you want it)
- 1 TBS white vinegar
- 1/4 tsp kosher salt
- 1/2 tsp celery seed
Combine the coleslaw and onion in a large bowl. Set aside.
Whisk together the salad dressing or mayonnaise, vegetable oil, sugar, vinegar, salt and celery seeds in a bowl and blend thoroughly. Pour this dressing over the coleslaw and toss to coat evenly.
Chill at least 2 hours before serving.
