Smoke, roast or grill your wild hog shoulder or hindquarter – all three methods will lead to a delicious outcome

Ingredients:

  • 1 wild hog shoulder or hindquarter roast, bone in or out
  • ¼ cup Kosher salt
  • ¼ cup brown sugar
  • ¼ cup paprika
  • 2 tablespoons black pepper
  • 2 tablespoons onion powder
  • 2 tablespoons garlic powder
  • 1 tablespoon cayenne pepper
  • 2 cups barbecue sauce

  • 1 ½ pounds of bison flap meat
  • Any rub/seasonings that suits your tastes
  • Teriyaki marinade
  • 3 jalapeño peppers
  • 1 white onion
  • 5 tomatoes
  • 2 avocados
  • ½ bushel cilantro
  • 1 banana pepper
  • 1 package tortillas
  • 3 lemons/limes
  • Garlic salt

Bourbon BBQ Venison Backstrap Recipe

With a sweet and tangy bourbon BBQ sauce drizzled over venison backstrap, this recipe is perfect to fulfill that Cajun craving.

Ingredients:

  • 1 venison backstrap with all silver skin removed
  • 1 cup Zatarain’s Creole Mustard
  • ¼ cup molasses
  • 1⁄3 to ½ cup fresh cracked black and white peppercorns
  • 2 tablespoons pink Himalayan sea salt
  • 2 tablespoons fresh puréed garlic
  • 1 tablespoon marjoram
  • 2 ounces Dale’s Seasoning (liquid meat marinade)
  • 2 ounces bourbon
  • 2 tablespoons Louisiana “Extra Hot” Hot Sauce

Bourbon BBQ Sauce:

  • ¼ cup vegetable oil
  • ¼ cup butter
  • 1 chopped banana, serrano or jalapeño pepper
  • 1 medium Vidalia onion, diced very fine
  • 1 cup bourbon or Tennessee whiskey
  • ½ cup ketchup
  • ¼ cup fresh lemon juice
  • ¼ cup apple cider
  • ½ cup apple cider vinegar
  • 1⁄3 cup unsulfured molasses
  • 1⁄3 cup Worcestershire sauce
  • ¼ cup brown sugar
  • 2 teaspoons sea salt (I use pink Himalayan sea salt)
  • 1 teaspoon cayenne pepper

  • 1 whole venison backstrap

Marinade:

Kentucky Sauce:

  • 1/2 cup butter (or 1 stick)
  • 4 cups ketchup
  • 4 cups mustard
  • 4 cups vinegar
  • 4 cups sugar
  • 1 tablespoon pepper
  • 1 tablespoon garlic salt
  • 1 tablespoon cayenne pepper

Every region of the world has its own version of barbecue, and Central Texas is no different. Oak hardwood and simple rubs are preferred to the sweeter and more complex offerings of Kansas, Memphis, and the Carolinas. Texas is beef country, and the king of beef is the brisket. Master that, and there's nothing you can't smoke.

Ingredients:

  • Whole, untrimmed "packer" brisket (13 to 16 pounds)
  • Kosher salt
  • Coarse ground black pepper
  • Garlic powder
  • Onion powder
  • Olive oil
  • Heavy duty foil or "pink" butcher paper
  • Oak hardwood (chunks, chips or pellets, depending on your cooker)
